A few months ago i invested in an electric pressure cooker. One of the ones with all the buttons on the front and the ability to work as a slowcooker. Up until recently, however, it hadnt cooked anything in it.
When I thought of pressure cooking I inevitably think of pressure canning, which made me a little wary. I love my preasure canner, but using it requires time and focus. Venting the air, ensuring the needle stays at the appropriate pressure, the long canning time for meat...I wasnt sure how it could be so quick.
Until I caved and experimented a little with teriyaki chicken. YUM. Why in the world did I wait so long?! Its as easy as throwing the ingredients into the cooker and pressing buttons. Dinner is ready in 20 minutes, so simple!

The flavor possibilities are seemingly endless! All you need is 1 lb of chicken, 1/2 cup of yummy sauce and 1/2 cup of water.
My pressure cooker has a button programmed for chicken. I dont know if every machine does though, but if yours doesn't the chicken just needs to be cooked for 10 to 15 minutes.
Make sure your lid is locked into place and that your vent is airtight. Once you hit start the machine begins working. The brand I have can take some time to warm up, so dont fear if you dont hear the machine making noise for the first few minutes.
My favorite 'recipe' keeps changing, but here are a few of the flavors we've done and loved with chicken:
1/2 cup Teriyaki Sauce and 1/2 cup water
1/2 cup Hot Sauce and 1/2 cup water
1/2 cup Tomato Sauce and 1/2 cup water
1/3 cup Sesame Ginger dressing, 1 tsp orange marmalade, 1/4 cup OJ, and 1/2 cup water
1/2 cup BBQ sauce and 1/2 cup water
I'm always looking for another flavor to try! (I know the hot sauce one sounds a little odd, but it's PERFECT for making quesadillas!)
